Honey Jalapeno Hot Sauce

For the second straight year I made hot sauce to give as a gift to family and friends this holiday season. And, again, I took my recipe from Fermented Hot Sauce Cookbook: A Step-by-Step Guide to Making Hot Sauce From Scratch by Kristen Wood. Ingredients for this one include:

Jalapenos (x20)
Garlic
Non-chlorinated H20
Salt
Cumin seeds
Apple Cider Vinegar
Honey

I started by putting the deseeded jalapenos and garlic into a water/salt bring and letting that ferment in my kitchen cupboard for ten days (giving the jar a daily burp). After that the jar was strained off and the jalapenos, garlic, cumin seeds, apple cider vinegar, honey, and a cup of brine went into the Vitamix for a blend.

First impressions are that this is a very tasty hot sauce that is absolutely hotter than I expected (thanks to the wild variability of jalapenos). After bottling the last step was attaching this label that was made by my ultra-talented daughter. I think this one will be a hit!
